About Gia

With many years growing up in a Greek/Italian home I’ve learned to make so many Mediterranean meals from scratch! Switching to gluten-free wasn’t easy as I had a love affair with bread and pasta! Although my biggest challenge as an ADHD creative was becoming bored with the same flavors and dishes which is why I created new ones with a special twist. In my spare time you’ll find me foraging for gourmet mushrooms! Did you know there are over 10,000 species of mushrooms? Most of them provide healing in many ways for tons of ailments! My professional experience: -A private Chef for swanky mansion parties -Invented and sold a unique version of dolmades aka grape leaves to the locals in Florida -Chef in a South Florida Farmer’s Market restaurant -Private Chef in Bali -Once cooked for hundreds of homeless people in need. I’m excited to share my wide range of culinary skills as well as my love for unique food flavor fusions with you!

While globe trotting and staying with the locals through Airbnb I continue to learn so many amazing new recipes. My favorites ones are also Gluten Free!

When I decided to go gluten free over 7 years ago I lost 50 lbs in two months. I’ve kept it off all these years! At first, it was hard finding items to substitute the delicious bread and pasta I had once come so accustomed to. Nowadays I’m an expert in GF cooking!

By incorporating mouth-watering international dishes into my traditional Mediterranean cuisine I can show you how eating healthy can be absolutely delectable. In addition, as an added bonus I’ll be teaching you how to forage and which mushrooms are the most delicious to find and cook!

I’m patient, thorough and detailed while helping you create flavorful appetizing dishes. I welcome all and any questions.
