About Barnabas

30 years experience in the hotel industry, fine dining, contract catering, education catering, casual dining including running my own baking business and gastropub.
Experienced in most ethnic cuisines (Italian, French, American, Mexican, Chinese, Indian, etc.), passionate about understanding and perfecting cooking and baking techniques (braising, grilling, roasting, sous vide, fermenting, hot and cold smoking, BBQ, etc.).
I have keen interest in the subject of the effect of diet on our health. Happy to integrate this into our lessons should you be interested.

About the lesson

My life centres around food. My passion for cooking started as early as 7 and by the age of 10 I was the nominated cook of my local scouts team. I took up my first apprenticeship at age 13 at the local pastry shop.
My career took a very colourful path allowing me to experience a wider range of the sector, from cooking in 5 star hotels to working as a private family chef to feeding hundreds of pre-schoolers, and more.
Throughout my career as a leader teaching has always been an integral part of my job and it became a passion of mine to pass my extensive knowledge on to help others to become a better cook.
I have a special interest in nutrition and healthy diet, particularly for young children and their families.
I have a flexible teaching approach and happy to tailor our lessons to your specific needs, covering any related topics from ethnic cuisines to baking to cooking techniques to building and running systems (such as health and safety), menu creations in professional kitchens, etc. You name it!

I believe learning to cook should be a fun experience so I will create lessons that are relaxed and enjoyable for you to get the most out of it.
